Built in 2007, the five - star Sumaq is the most recent treat on offer, featuring huge rooms, spa baths, plasma TV screens, King- sized beds buried under plumped cushions – and breathtaking views.
Of the rushing Urubamba River, this snakes through the Andes. General Manager Aníbal Clavijo Begazo ( the son of the Peruvian owners) is impressed when ST arrives on foot. “Only 5 to 10 per cent of our guests arrive by walking the trail,” he says.” Most of them catch the luxury train.”

Paralelamente, el chef comparte sus conocimientos brindando asesoría gastronómica al Sumaq Machu Picchu Hotel, el único hotel cinco estrellas en Aguas Calientes (Cusco). Allí la cocina del restaurante Qunuq acoge al comensal con una propuesta que fusiona técnicas y productos que seducen el paladar con un recorrido de sabores que no son exclusivos de Aguas Calientes, sino que permiten ofrecer al turista un panorama completo de a variedad de insumos con los que cuenta el Perú.
