Qunuq chef Rafael Piqueras is an Acurio devotee who studied at the Lima outpost of Le Cordon Bleu. Unlike most Lima chefs, Piqueras emphasizes ingredients from the surrounding Andes, like alpaca and olluco (a yellowish root vegetable).
The editor visited Sumaq in August 2009.

Já os hotéis de Águas Calientes, lugarejo porta de entrada de Machu Picchu, estão prontos e preparados para voltar a receber os turistas. A assessoria do Hotel Sumaq (foto), um cinco estrelas e entre os três melhores da cidade, informou que está preparado em cem por cento para receber a seus hóspedes, assim que as rotas de acesso para o povoado sejam restabelecidas.

Urban efficiency and modern design aren't usually associated with a UNESCO World Heritage site, but Sumaq (Quechua for excellent or beautiful) is pulling off both. Half of the 60 orange-and-white rooms have balconies overlooking the river; the other 30 have big windows facing the mountains.
